Almond Flour Cardamom Peanut Butter Thumbprint Cookies
- Ready in under 15 minutes from start to finish.
- Gluten, grain and dairy-free.
Step 1. Preheat oven to 350 degree and line a cookie sheet with parchment paper.
Step 2. Mix egg, vanilla and peanut butter until you get a smooth paste.
Step 3. In a separate bowl, mix sugar, almond flour, salt and cardamom and add dry ingredients to wet.
Step 4. Mix dough and roll into 24 balls and press your thumb into the center of each.
Step 5. Bake for 9 minutes on top rack. Once cookies have finished baking, fill each with 1/2 tsp jam and let cookies cool.
