Creamy Carrot + Ginger Soup (Vegan, Paleo, Whole 30)

Ingredients:  - Carrots  - Onion - Coconut Milk - Broth - Fresh ginger - Optional: cashews

Step 1. Roast carrots and onions for 25-30 minutes.

Step 2. Add roasted veg to heated broth and simmer along with remaining ingredients for 20 minutes.

Step 3. Add vegetables and coconut milk to food processor and as much broth as you want. Puree until smooth.

Step 4. Top with crushed cashews.
