– Summer squash
– Red bell pepper
– Sweet potatoes
– Butternut squash
– Extra virgin olive oil
Step 1. Prepare the first roasting sheet and roast summer squash, zucchini and peppers with extra virgin olive oil, salt, pepper and spices for 15-20 minutes.
Step 2. Prepare the second roasting sheet and roast broccoli with extra virgin olive oil, salt, pepper and spices.
Step 3. Prepare the third roasting sheet and roast sweet potatoes and squash for 30 minutes until fork tender.
Store Veggies for up to a week in an airtight container.
