Ingredients: – Chopped cashews – Toasted sunflower seeds – Raw pumpkin seeds – Chia seeds – Coconut flakes – Peanut butter – Cinnamon – Coconut sugar or allulose – Vanilla extract – Coconut oil
Step 1. Combine peanut butter, sugar, cinnamon, coconut oil, vanilla and mix well.
*Pro Tip. It's essential you use large coconut flakes as opposed to small or shredded.
Step 2. Add remaining ingredients and mix to fully coat the nuts and seeds.
Step 3. Toast mixture on top rack at 350 degrees for 6 minutes. Stir well and let toast for another 6 minutes.
Step 4. Let granola cool completely.
*Pro Tip. Use runny unsweetened peanut butter.
Serve with with your favorite plant milk.
Or with plant based yogurt and fruit.
Store granola in an air-tight container for several weeks.
