Easy Thai Peanut  Lentil Curry (Vegan, Gluten-Free)

coconut oil lentils coconut milk  red pepper  onion fresh ginger garlic peanut butter ground coriander Thai red curry paste dried lemongrass  fresh cilantro coconut sugar

Step 1. Boil lentils for 15-20 minutes until soft.

Step 2. Cook onion and pepper for 8 minutes until soft.

Step 3. Add ginger, garlic and spices and cook for 30 seconds.

Step 4. Add peanut butter, coconut milk and water and simmer for 5 minutes. Lastly, add cooked lentils and simmer for another 5 minutes. Finish with cilantro.
