Moroccan Chickpea Tagine with Preserved Lemons (Vegan + Gluten Free)
Ingredients: Extra virgin olive oil Onion Chickpeas Carrots Garlic Ground coriander, cumin, cinnamon + ginger Broth Preserved lemon Tapioca flour Dried dates + apricots
Step 1. After seasoning Tagine, preheat Tagine on low heat. Or if you're cooking the stew in a pot, preheat pot.
Step 2. Add olive oil and onion and cook for 5 minutes. Add the rest of the ingredients aside from chickpeas, tapioca and cilantro and cook for 30 minutes, stirring occasionally.
Step 3. If using a regular pot, cook for about 20 minutes or until carrots are soft. Add chickpeas and cook for another 10-15 mintues.
Step 4. Lastly, add tapioca and cilantro and stir well. Serve over cooked rice.
