No Bake Raspberry Cheesecake Bites (Vegan, Paleo)
Ingredients: Honey Deglet Noor dates Walnuts Shredded coconut Cashews Full fat coconut milk (cream only) Coconut oil Frozen raspberries Fresh raspberries Vanilla extract
Step 1. Soak cashews overnight. Meanwhile, pulse walnuts, dates, shredded coconut and 2 tbsp honey until you have a sticky mix.
Step 2. Add mixture to pan and press flat and freeze to set for while you get on to the next part.
Step 3. Add remaining ingredients aside from fresh raspberries and puree. Add mixture to crust and top with raspberries. Refrigerate for 4 hours. Cut into 16 pieces.
