This tuna salad with apple dill and lemon vinaigrette is an easy, healthy and delicious lunch you can whip up in minutes.

A can of tuna is a great lunch option, particularly when you're hungry and haven't planned well. I often make a big batch of tuna salad at the beginning of the week and have it on hand for lunches. Everyone likes it and minimal effort is required.
While making tuna salad is pretty basic, we often forget about the simplest things available to us in those hangry moments where we just want to stuff our faces with anything (not that I do that). You need less than 10 minutes to whip up this tuna salad with apple and dill. Tuna salad works well with avocado, tomatoes, any sort of greens, radishes, walnuts, and pumpkin seeds, but you can get creative and pair it with whatever you fancy.

Let's Make it
Step 1. In a medium bowl combine tuna, mayo, mustard, apple, lemon zest and juice fresh dill and mix all ingredients together.
Step 2. In a small mixing bowl, mix together olive oil, lemon juice, salt, pepper, honey and mix well.
Step 3. To assemble, layer a handful of greens on a plate, add tuna salad and if you wish, any other toppings. Drizzle with dressing.

Fuji or Honeycrisp work best. You want a crispy apple to add nice crunch to the tuna salad.
I prefer albacore tuna to chuncky tuna because I prefer the texture of the albacore but you can use whatever you'd like and what works best for you.

Lemony Apple And Dill Tuna Salad
This tuna salad with apple dill and lemon vinaigrette is an easy, healthy, delicious lunch you can whip up in minutes.
Ingredients
- 2 cans drained tuna
- 1 tablespoon mayo
- 1 teaspoon Dijon mustard
- ½ teaspoon lemon zest
- 3 teaspoons lemon juice
- ½ medium crunchy apple finely minced
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon fresh dill
- 2 tablespoons extra virgin olive oil
- ½ teaspoon honey
Instructions
- In a medium bowl, combine tuna, mayo, lemon zest, 1 teaspoon lemon juice, mustard, fresh dill, ¼ teaspoon salt and ¼ teaspoon pepper.
- In a small bowl, combine olive oil, remaining salt, pepper, lemon juice and honey. Whisk well.
- To assemble, layer your greens, add the tuna salad, any toppings you wish, and drizzle with the dressing.
Notes
1. You can add any toppings you'd like such as walnuts, cucumbers, avocado, radishes.
