As is often the case, I'm particularly drawn to quick and easy recipes. Especially to those involving 3 main components. This super simple cucumber appetizer is one I have fallen for because it's creamy, crunchy, meaty, satisfying - basically, a lot is happening in one bite.
I find appetizers involving shrimp to be some of the fastest, most forgiving, and customizable recipes. So for this appetizer, you'll simply need shrimp, cajun seasoning, guacamole (homemade or storebought), and English cucumber. Pretty easy, right? I think so. Another great thing about this recipe is that it's also low-carb and keto, making it ideal for anyone following a low-carb lifestyle.

Let's Make It
Step 1. Mix Shrimp with Cajun seasoning, olive oil, and if you'd like a pinch of salt. Let the mixture sit.
Step 2. If you're making homemade guacamole, grab the recipe here, otherwise, skip this step for storebought.
Step 3. Peel some of the skin off of the English cucumber while still leaving some on for extra texture. Set aside.
Step 4. Preheat a large pan over medium-high heat. Add shrimp and cook for about 3 minutes on each side until the shrimp are cooked through and have a little char. Remove shrimp from the heat and set aside.
Step 5. To assemble the cucumber appetizer, simply make a stack of cucumber, add a little guacamole, and top with shrimp. Serve right away.

What Size Shrimp Should You Use?
In my opinion medium shrimp work best for this recipe, simply because they fit well on top of the English cucumber.
What Is The Best Kind Of Cucumber?
You may have noticed that throughout this post I've been using mainly English cucumber as a reference because it is truly the most ideal for this appetizer. Regular cucumber has larger seeds and doesn't quite have the same texture. Now of course, if you can't find English cucumber, that's fine.
Can You Make The Recipe In Advance?
You certainly can. You can cook the shrimp and store it in an air-tight container in the refrigerator for 1-2 days. You can slice the cucumber. When it comes to guacamole, if you're making your own, I recommend using it within 30 minutes to an hour of making it so leave that for the last part.
What Can You Use As A Substitute For Cajun Seasoning?
If you can't find Cajun seasoning, you can use Old Bay, Chili powder, even chipotle powder, or any other seasoning you'd like.

- ¾ lbs medium shrimp, peeled and deveined
- 1-2 tablespoon extra virgin olive oil
- 2 teaspoon cajun seasoning or more if you want extra flavor
- pinch of salt (optional)
- ⅓ cup guacamole
- ½ English cucumber partly peeled and sliced into ½" pieces
- chopped cilantro (optional)
Instructions
1. Mix Shrimp with Cajun seasoning, 1 tablespoon extra virgin olive oil, and if you’d like a pinch of salt. Set aside.
2. If you’re making homemade guacamole, grab the recipe here, otherwise, skip this step for storebought.
3. Peel some of the skin off of the English cucumber while still leaving some on for extra texture. Set aside.
4. Preheat a large pan over medium-high heat. Add 1 tablespoon extra virgin olive oil, shrimp and cook for about 3 minutes on each side until the shrimp are cooked through and have a little char. Remove shrimp from the heat and set aside.
